Easy and fastest way to make sponge fingers at home
What is a finger sponge?
a finger sponge with finger-like feature in particulara common red or orange sponge (Chalina oculata) related to important commercial sponges and widespread in shallow waters on both Atlantic coasts.

STEPS
1. Cream the egg yolk and sugar in a bowl until creamy and almost white

4. Gradually add the sieved flour and remainder of the white alternatively, mixture as lightly as possible
5. Place in a piping bag with 1 cm plain tube and pipe in 8cm lengths onto baking sheets lined with greaseproof paper
6. Sprinkle liberally with acing sugar . Rest for 5 minutes or until golden brown.
7. Bake in a moderately hot oven for about 19 minutes, repeat , the bake
8. Remove from the oven, lift the paper on which the biscuits are piped and place upside down on the table
9. Sprinkle liberally with water. This will assist the removal of the biscuits from the paper
They are incredibly easy to make and can be frozen with parchment paper between each layer to prevent them from sticking together. They can be stored in an airtight container for weeks. They are ideal for any unannounced visitors who arrive and want a quick cup of tea and something sweet to eat because they take almost no time to defrost.
What is the sponge finger in a trifle known?
Trifle sponges are easy to find in the UK but harder to find elsewhere, and the best alternative is Sponge Finger biscuits ( commonly known as Savoiardi or Ladyfingers). These are dry and light and also absorb liquids well.
