100g fat

2 egg
STEPS
1. Line a tin with greaseproof paper and grease lightly
2.Sieve the flour, mixed spice and bicarbonate of soda into a bowl.
3. Pour the syrup, sugar and fat into a pan and melt without boiling. Do not allow the mixture to become too hot. Pour over flour.
4. Beat the egg and milk, add ginger and as to the mixture. Stir well but don't beat. Add lemon rind
5. Pour into the mixture into the lined tin and bake for 400 minutes.
6. Leave in the tin until cool and then remove the paper
