Scotch Broth homemade recipe

I first had this soup in a small pub outside of Inverness in the Scotch Highlands. It was the perfect meal for a chilly afternoon and left me feeling happy, nourished and ready to continue my sightseeing adventure. Enjoy a hearty Scotch Stock Soup for a healthy lunch or dinner. Scotch broth is a hearty soup native to Scotland. The main ingredients are usually barley, lamb, mutton or beef stew or stew, root vegetables and dried legumes. Cabbage and green onions are often added just before serving to preserve texture, color and flavor.

Scotch Broth is a flavourful soup made with barley, dried peas, and common vegetables. These simple ingredients combine with stock to create a warming broth that tastes amazing and fills you up.

Ingredients

100g mutton

500ml mutton stock

100g vegetables (carrot, onion, garden eggs), chopped

Bouquet garni Chopped parsley

Salt, pepper


Method

1. Place the fat-free mutton in a saucepan and cover with ice water.

2. Bring it to a boil, then immediately rinse with cold water.
3. Clean the pan, replace the meat, cover with cold water, bring to the boil and skim. 

4. Add the vegetables, bouquet garni and seasoning.

5. Skim when necessary; simmer for approximately 30 minutes, until tender.

6.Remove the meat, allow to cool and cut from the bone, remove all fat and cut the meat into neat dice the same as the vegetables; return to the broth.

7. Correct the seasoning, skim off all the fat, add the chopped parsley and serve.


Why is it called Broth?

Recently, I think I've become accustomed to calling clear soup stock. However, by definition, a soup is "a soup made up of pieces of meat or vegetables, often rice cooked in the broth", which describes Scottish soups fairly well (with the exception of rice ).

Is Scotch Soup Healthy? 

Scotch soups are like "super soups" and are very healthy. This soup contains so many nutrients, including root vegetables, pearl barley, lamb and cabbage protein, and antioxidants from rutabaga/turnip/Swedish.
